The pump can be mounted anywhere it’s convenient, however it needs to be at the lowest point in the system. In other words even with the bottom of the fresh water tank. You only need one pump for the four sink version.
Are there written step by step printable directions?Also,Im thinking of building a 4 x 8 feet cart.Do you have plans for this? What about the warming pans or just pans w lids for cheese,relish,sourkrout?I don’t see any of these on blueprints.It must be exact for approval.Thanks Steve.Joan Moore
However, most of the actual instruction is in the videos. We did that for a reason. As you will see in the videos, we start by taking measurements for the cart body from the trailer frame. That makes it simple to build any size cart that you want to. In your case you can get the 4′ x 8′ trailer kit from Harbor Freight and proceed from there.
After you watch the videos you will be able to modify the layout of your cart and add or subtract any equipment that you want. We designed the E-Z Built to be completely customizable. As you can see on the photo gallery, I don’t think any two customers have built theirs exactly alike. I love seeing the mods made by our members!
As far as exact schematics go, you can use the ones we include in your membership as patterns. It’s pretty simple to draw up a schematic for the health department using graph paper, a pencil, and a ruler.

The health department in Austin, TX requires that the wastewater tank clean-out valve, and the clean water fill valve, be located on the exterior of the unit. Will the videos show me how to do that?
Talked to the state health dept. guy (our county doesn’t have a health dept.). He didn’t seem very thrilled to answer many questions. One thing he said is that I need 4 sinks and other then the handwash one the others had to be as big as the largest pan I had to clean. That seems pretty big to put on a cart or am I missing something. Thanks for all the great info.
Tell him you are washing your pans at your commissary. Then the largest sink only needs to be as big as your largest utensil. Show him a pair of 6″ tongs. This has worked for a lot of slingers.
