I was curious: if the health inspector want’s to see your set up, will removing that little door be enough for them or will there be another vantage point that they can see from? Or do they just want to see that the water flows? (You mentioned that you don’t want any leaks and they certainly wouldn’t want to see any either)
99 times out of 100, all they want to see is the water flowing. They may take a temperature reading if hot water is required in your area. If they insist on seeing the tank, you can remove the little door.

How do you fill your fresh water tank?
Hey Kyle, I use a funnel and pour fresh water in from another jug. A steo stool comes in handy for this. You could use hose if it is “food grade”.
