    1. In Kentucky you have to have 4 sinks. Do you tee the drain to the waste water tank or run its own line to it?
    2. What about pumps I didn’t see any pumps in the video. Does the hot water heater push the water through? Just asking, never used a tankless heater.
    3. If I may ask what kind of paint you use on the outside?

    1. Hey Kevin,
      1. Tee the sinks in the 3 compartment sink together, then either run a separate drain pipe to the waste water tank or tee that into the hand washing sink drain pipe.
      2. The pump is shown in Video 47
      3. I used exterior house enamel applied with a roller. It’s surprising how good such an easy paint job looks.

        1. You don’t have to jump ahead. You won’t need to worry about the pump until it’s time to hook up the plumbing which is a ways down the road. Be sure to build the cart in the order that the videos are presented.

    1. I used some 1/2 inch pine boards that I had laying around, then I skinned it with the same luan plywood that is used on the cart body.

    1. Just build a box that will hold three sink bowls and the rest is the same. A lot of folks use 1/3 size or 1/9 size steam pans for the sink bowls.

  2. Steve the state of Georgia requires not only a sink for washing hands but a 3 sink to washing,rinsing and sanitizing. Do I tee the 3 sinks and have another drain pipe to empty into the 7gal. waste water tank? Also, do I need a seperate pump to pump water to the swivel faucet?

    1. You only need one pump. If your 3 compartment sink is far from your handwashing sink wire a second switch for it just like the first. Yes, tee the 3 sink drains and run another drain pipe to the waste water tank.

  3. Steve, I was wondering if you had any problems with the sink not fully draining since the the drain hole is slightly higher then bottom of bowl with washer? I live in California and my inspector is very detailed oriented.

    1. You can build three into one box and mount it anywhere you want to. Most folks screw the box to the side of the cart somewhere. You should use one long kitchen type swivel faucet mounted in the middle so it can reach all three sinks when you swivel it. The plumbing is just like the single hand wash sink, but you will tee all three drains together before running a pipe to the waste water tank.

  4. Hey Steve and fellow builders.
    I need some help on materials to make 3 ware washing sinks for a California build.
    The options for these sinks are, 12x12x 10inch deep, or 10×14 x 10inch deep. Either way, I don’t know what to use for the sinks? Haven’t found a hotel pan of this size yet.
    Any ideas?

    1. Hi Tommy,
      This is the first time I have heard of a health inspector giving such specific size requirements for a sink. Usually they don’t give any specs and when they do they usually just say, “the sink must be large enough to fit your largest item”. We always say that our largest item is a 6″ tongs.

      I have made sinks out of plastic storage bins. There are many sizes of those available. Maybe that will work for you?

  5. Steve, You talked about painting all surfaces so that no bare wood is visable. Is there any regs against using a clear poly to coat the entire cart, thus allowing the wood grain beauty to shine through. And still be a washable surface?

    1. Always check with your health inspector but that sounds like a great idea. Clear poly should be just as good as paint. It makes the wood surface “non-porous and easily cleanable” which is what most health codes specify.

      I have actually built boats using the luan plywood. The outer surfaces are a species of mahogany and they look beautiful under a clear coat. Send pics when you finish it!!!

  6. Steve, Avery here..in NC we don’t have to have to have a sink, with that being said. Why would i need hot water or what would be the reason for fresh tower period other than bottled water for steaming hot dogs. Thanks.

    1. If you don’t need a sink, you don’t need a water heater or fresh water tanks. Turn the tower into a cabinet.

  7. I am in Seattle and would like to build a cart but I am having a hard time trying to find out how many sinks are required by my King County/Seattle Health Dept.
    is there any Seattle slingers here that can tell me?

    1. I always encourage my students to talk directly to their health inspector. Do not rely on second hand info from others. Take a trip to your local health department and get the info directly from the person who will be inspecting you.

    2. There are no dates here so not sure if you already built your cart but we only need 1 sink in seattle. Let me know because if you are rolling i have questions

      1. Always get your info directly from your health inspector. That way you can be sure you are getting the correct info.

  8. I noticed in one of the pictures where 4 sinks are built into the top surface of a cart. I plan on building the cart (actually paying someone to build it). If you give me a screw driver and a screw I would put the screw and the screwdriver through my hand . It’s just how I roll . Anyway, I want this cart to be compliant with the strictest health codes in the country. Have you heard of any issues with the sinks being placed in the middle of the top surface ? I’m just picturing reaching over the food or the cooler to wash some dirt or whatever from my hands and dropping some unwanted condiments onto the dogs. Of course keep the lids closed while washing and use common sense but I’m looking at it through a health inspectors strict eyes.

    1. Health codes vary wildly from one location to the next. This makes it somewhat difficult to build a cart that will pass inspection universally. But you are on the right track by using four sinks. It doesn’t really matter where the sinks are located. The main concern is isolating the hand washing sink from the rest of the sinks. This can be accomplished by fabricating a “wall” out of plexiglass or aluminum sheet. Make it about 12″ high (put a right angle bend in it if you need two sides shielded). Fasten it to the work surface of the cart so that it separates that sink from the others, or from the steam pans.

  9. Hi Steve,

    I had a question about the faucet being mounted to the sink.

    The plywood that the faucet is mounted on is only 1/4 ” thick.

    Did you reinforce the that set up?

    Is the 1/4 inch thick plywood strong enough to hold the faucet?

    Is there a specific reason why you cut the hole in the waste tank on the corner of the waste tank, instead of in a flat section of wate tank. Im talking about the hole where the PVC goes into?

    Just curious about your placement of the grey water tank. Any reason you decided to place the grey water tank in the body of the cart rather than extending the sink box and placing the tank under the sink? I’m new at this and very excited on how mine is turning out. Thank you for your time.

    1. You could build a box for the grey water tank under the sink, however be careful about extending the cart body too far in the front. You could contact the tow vehicle on tight turns. You don’t want to do that, believe me.

  12. 2 questions

    How long top to bottom should sink box be (the one you show in video 12 X 15 X ?

    Can i use OSB Board for sink box , since I am skinning it, or will there be a problem getting nails or screws to hold into the edges of that type of board

    1. Just long enough to hide your sink bowl and plumbing. I wouldn’t use OSB. It would hold a screw OK but it doesn’t look good, even painted.

  13. i was under the impression that brass on brass screw in fittings should never be used with teflon tape. Is that accurate

  14. I am not able to buy the Dial 9229 brass cooler drains here in Canada. Can’t get it delivered to Canada.

    Any other suggestions? OR, Maybe someone could buy for me and ship it to me? I need 4 as I have 4 sinks on my cart.
