Steve, is there a constructional reason for all the work stations , ie the steam table and cooler box being off centre of the top or is this to allow for a serving area to the right of the cart? regards Terry.
No reason. I just figured that since most people are right handed I would move the steam table as far left as possible to create a small surface on the right to set frequently used items.
I’m going to keep my cooler separate off to the side on a short tale. I need the extra surface area for my triple crock pot set up for chili and cheese sauces etc. that will run off a couple deep cycle marine batteries with an inverter, then I will trickle charge them at night when I’m done for the day. I saw a guy with a set up like that and he could go a couple days sometimes without a recharge. other than that I see the convenience of having everything in a nice tidy little unit. Great job on these videos Steve.
Not really. The amount that can get in through that small space is minimal. The cart should be painted inside as well as outside with exterior enamel to protect it against moisture. Drill a 3/8 drain hole in the floor at each corner for draininage. If you are storing the cart outside for extended periods use a cover of some sort.
How do you let the cooler drain? Please be specific with specific parts. I purchased a marine cooler. The drain plug that is currently on it is not long enough to add a drain tube.
Hi Lisa, every cooler is different. You may have to get a little creative to hook up a hose. If not, it is easy to siphon the melt water out of the cooler with a piece of plastic tubing.
Hi Vicki, just get a piece of plastic tubing that you can attach to the drain on your cooler and run it to the melt water tank. Or skip the whole cooler drain if your health department does not require one.
The city of Austin requires a “Mechanical cooler/refrigerator” on all hot dog carts. Any recommendations for a propane powered one? Or any suggestion on a good way to power it? Thanks in advance! Loving the series!

I recommend electricity. Run a deep cycle battery through a power inverter. Here is a link to some fridges that will work nicely.

In Nj, we need 3 sinks, can I put in a smaller cooler so I can put the sinks in?
